La Esperanza is a small, family-run 1.5-hectare farm in Villa Moreno, about 20 minutes from Buesaco. Nestled at the foot of the mountain and close to the Meneses stream, its crops benefit from steady humidity, abundant water and rich organic matter, found in abundance in Nariño. The region's volcanic soils, rich in minerals from the eruptions of the Galeras volcano, create a stable, favourable microclimate for coffee cultivation and are essential to the exceptional quality of the coffee grown in the region.
Ximena begins their coffee production process by carefully harvesting the cherries at their peak ripeness. The cherries are then placed in a flotation tank to separate them by density, with the highest quality cherries being naturally fermented in their whole form before being pulped the following day. Typically, the cherries are harvested and gathered over five days, with washing taking place at the end of the week. A key step in the process is the daily mixing of the coffee mass, which takes place in open vat tanks which are exposed to the environment. Once fermentation is complete, the beans are washed with clean water to remove any remaining mucilage and then dried in the sun. The region's moderate ambient temperature allows for a slow drying process, which can take anywhere from 8 to 15 days.
