In 2008, Jonathan and his brother Johan Gasca began exploring specialty coffee on their family farm, Zarza, in Bruselas, Colombia. Building on their family coffee knowledge, they expanded their processing methods and embraced sustainable practices, including beehives for pollination and honey. Over time, they refined techniques to enhance quality and consistency, overcoming early challenges while remaining dedicated to producing exceptional, distinctive coffees, including this Wush Wush varietal.
Wush Wush is a rare Ethiopian coffee variety originating from the Wushwush region in southwest Ethiopia. The Zarza farm's high altitude of 1,750-1,800 masl, and careful processesing methods, allow this coffee to shine with impressive clarity and elegance. Due to its rarity and distinctive sensory character, it is highly sought after in specialty coffee and frequently featured in premium microlots and competition-level offerings.
In this cup, we can enjoy floral notes of apricot yogurt and passion fruit.
