Volcan Azul, owned and operated by Alejo Castro, is a prestigious coffee farm located in the West and Central Valley of Alajuela, Costa Rica. Alejo has upheld his family's historic tradition of excellence in coffee cultivation by modernizing production practices, while recognizing and honouring the rich heritage of his innovative ancestors. Through his thoughtful use of advanced techniques, including meticulous soil management and advanced processing methods, his family's farm has raised standards across the industry.

This is our second year serving an SL28 from Alejo, and we are so happy to offer you this coffee as a very limited edition. This SL28 was grown from seeds given to Alejo by a Kenyan friend, and it now flourishes on the farm in Costa Rica. This SL-28 lot was dried for two days on patios and then refined for 50 hours in a mechanical dryer, achieving a moisture content of 11.6%. This drying technique directly influences the structure, density, and longevity of the final product. The lot was then anaerobically processed, undergoing a 5-day fermentation in sealed tanks at 21 degrees.

This year, we get some citrus (think grapefruits) notes as well as red fruits and delicious warm baking spices.
