Volcan Azul, owned and operated by Alejo Castro, is a prestigious coffee farm located in the West and Central Valley. Coming from a long line of coffee growers, Alejo has refined the farm’s production through innovative processing techniques and the cultivation of rare coffee varieties. At Volcan Azul you can find many varieties including caturra, geisha, and SL-28 among many others.

This SL-28 is an example of Alejos innovation and desire to bring something fresh and interesting to the coffee world. Alejo introduced SL-28 to his farm using seeds from friends in Kenya. This SL-28 lot was dried on a patio for 5 days, then finished in mechanical dryers for 10 hours to reach 11.6% moisture. It also underwent warm anaerobic processing, fermenting in tanks at 22°C for 5 days until reaching a brix level of 14.

We find this coffee to have very intense notes of ripe strawberry, with some fun funk. Lots of acidity and sweetness make it feel resemblant of lemonade. To round it out there is a good balance of chocolate in the finish too. 

Perfect option for a pourover.
