We believe that launching a coffee roastery isn’t just about perfecting the roast. It’s about creating a complete experience for everyone who enjoys and is curious about coffee. Offering delicious coffee is one aspect of developing a space where craftsmanship, community, creativity, and meaningful connections come together seamlessly. Nevertheless, the journey from idea to reality was anything but straightforward or easy. It was an unforgettable experience that reaffirmed our love for coffee, the process, and, most importantly, the incredible community we serve.

The development of Even Coffee spans over a decade and has been shaped by our diverse industry experiences around the world. The people we met, what we learned, and the skills we honed in different roles at cafes and roasteries helped clarify our intentions for Even and ultimately refined the slow, enjoyable, quality experience we create here. 

From the café ambiance to the final sip, we want every detail to create a unique and holistic experience that makes enjoying coffee meaningful.  While some may think we are trying hard to offer ‘something different’, we are simply striving to deliver consistency in the quality of our products, the coffee we brew, and our interactions with customers.

While it may seem seamless, Even Coffee’s journey to launch has not been without its challenges. One of the biggest hurdles was balancing the art of roasting with the demands of actively running a business. Starting the roaster, managing the process, and adapting to a new roasting method were monumental tasks.  You can fine-tune the roast on any particular coffee indefinitely, but eventually, you must release it, market it, and sell it to your customers.  (Perfectionism is really the enemy of the good here). The real obstacles that arise when establishing a new business often go unnoticed. For example, the day-to-day operations and backend tasks present a constant learning curve for all of us.  However, our love for coffee and our clear intent to deliver a unique coffee experience keep us focused and excited to watch how the community responds to Even.

So far, the reaction we’ve seen during our soft launch has been incredibly fulfilling for all of us. Watching our initial customers enjoy the coffee experience, engage with the space, return often, and bring their friends to join our growing community has given us some of our most rewarding moments. The highlight of our day is connecting with our customers, hearing, and having them consistently make Even Coffee a part of their routine. 

While we are still in the early stages, we feel a genuine momentum growing. The feedback from our soft launch has been overwhelmingly positive, and we are eager to see how the café, roastery, and our community evolve with the changing seasons.  We recently launched a new website so customers can order our evolving selection of coffees and accessories online and learn more about our story and amazing team. Lastly, we have an exciting lineup of creative project collaborations with Montreal artists and innovators that we will showcase on our website and social media platforms in the coming months.  

The future of Even revolves around our community, process, consistency, and passion for coffee. If our journey thus far is any indication, this is just the beginning of something meaningful for everyone.
