nestor-adrian-lasso
Nestor & Adrian Lasso

High in the mountains of Pitalito, in southern Huila, Finca El Diviso has become one of the most influential names in modern Colombian specialty coffee. The upper Magdalena River valley channels warm air through the mountains and keeps temperatures stable, while elevations of 1,750 to 1,900 metres slow cherry maturation even further. These conditions are ideal for Gesha, an Ethiopian variety famous for its floral aromatics and tea-like clarity. This washed Gesha from the farm’s Doña Martha lot is a refined, elegant expression of what the variety can achieve outside its well-known Panamanian context.

El Diviso was founded by José Uribe Lasso. Two generations later, his grandsons Nestor and Adrian Lasso took over and turned it from a conventional coffee farm into a forward-thinking microlot operation. The farm covers 18 hectares: 15 are planted with around 80,000 coffee trees and 2 are kept as native forest. The brothers grow an impressive range of varieties, including Gesha, Sidra, Pacamara, Java, Caturra Chiroso, Bourbon Ají and Pink Bourbon. Nestor brings a scientific mindset to fermentation and varietal expression. Adrian trained in quality evaluation and sensory analysis through SENA and oversees varietal selection, cherry quality and post-harvest protocols. Together with partner Jhoan Vergara, they have made El Diviso a regular at Cup of Excellence Colombia and a favourite among competition baristas around the world.

At El Diviso, only fully ripe cherries are selected. They go through flotation and hand sorting to remove any defects or underripe fruit. After a short oxidation phase in cherry, the coffee is pulped, innoculated with yeast and fermented under carefully controlled conditions in sealed tanks. Drying takes place in stainless steel dehumidifying chambers, a dark, airtight environment where temperatures never exceed 37 to 38°C. This protects the delicate aromatic compounds of the Gesha variety until the coffee reaches a moisture content of 10 to 11%. The coffee is then stored in hermetic bags to preserve its aromatics through to milling.

In the cup, you’ll find a sparkling acidity reminiscent of candied lemon, paired with the crisp, lemon-lime freshness of Sprite. A delicate oolong tea note gives the coffee its elegant, tea-like structure, while a lingering sweetness of summer honey rounds out the finish.
